Ft. Butterfly Bakery of Vermont Hot Chipotle Tomatillo Salsa and Smoked Onion Powder; Red Hen Bakery Baguette
Tomatillo Hummus with Smoked Onion Toast Points
Ingredients:
- Baguette, sliced on a bias
- 2 Tbsp olive oil, or as needed
- 1 Tbsp BBVT smoked onion powder, plus more for garnish
- 1 can (16oz) chickpeas, drained and rinsed
- 1/4 cup BBVT hot chipotle tomatillo salsa
- Salt, to taste
- Black pepper, to taste
Directions:
- Preheat oven to 375°F
- Spread baguette slices in a single layer on a parchment lined sheet tray
- Drizzle with olive oil, then sprinkle with salt, pepper, and smoked onion powder
- Bake baguette slices for 5-10 minutes, or until golden brown and crispy
- While the bread is toasting, place rinsed chickpeas and hot chipotle tomatillo salsa into food processor
- Puree mixture in food processor until almost smooth, using olive oil to help achieve desired consistency
- Season to taste with salt and pepper
- For serving, drizzle with additional olive oil and sprinkle with smoked onion powder, serve with toast points
