Tomatillo Hummus with Smoked Onion Toast Points

Ft. Butterfly Bakery of Vermont Hot Chipotle Tomatillo Salsa and Smoked Onion Powder; Red Hen Bakery Baguette


Ingredients:

  • Baguette, sliced on a bias
  • 2 Tbsp olive oil, or as needed
  • 1 Tbsp BBVT smoked onion powder, plus more for garnish
  • 1 can (16oz) chickpeas, drained and rinsed
  • 1/4 cup BBVT hot chipotle tomatillo salsa
  • Salt, to taste
  • Black pepper, to taste

Directions:

  • Preheat oven to 375°F
  • Spread baguette slices in a single layer on a parchment lined sheet tray
  • Drizzle with olive oil, then sprinkle with salt, pepper, and smoked onion powder
  • Bake baguette slices for 5-10 minutes, or until golden brown and crispy
  • While the bread is toasting, place rinsed chickpeas and hot chipotle tomatillo salsa into food processor
  • Puree mixture in food processor until almost smooth, using olive oil to help achieve desired consistency
  • Season to taste with salt and pepper
  • For serving, drizzle with additional olive oil and sprinkle with smoked onion powder, serve with toast points
