Sweet Potato Spicy Goat Cheese Bites
Ft. Butterfly Bakery of Vermont Rum Barrel Fermented Smoked Jalapeno Hot Sauce & Vermont Creamery Goat Cheese
Ingredients:
- 1 medium sweet potato
- Olive oil, for coating
- 4oz Vermont Creamery Goat Cheese
- BBVT Rum Barrel Fermented Smoked Jalapeno Hot Sauce
- Salt and pepper
- Toasted almonds
- Dried cranberries
Directions:
- Preheat oven to 375°F
- Slice sweet potato into 1/4 inch rounds and drizzle with olive oil
- Arrange on parchment lined sheet tray
- Add salt and pepper to taste
- Roast for 15-20 minutes or until the edges begin to brown
- In a separate bowl, combine 1 package of Vermont Creamery Classic Goat Cheese with 2 tbs -1/3 bottle of Rum Barrel Fermented Smoked Jalapeno Hot Sauce (the amount you put will depend on how spicy you want them)
- Add salt and pepper to taste
- Scoop 1 tsp of goat cheese mixture onto each round
- Garnish with toasted almonds and dried cranberries
